Black Box Wine & Corn Salsa Bruschetta

I was recently asked to review Black Box Wine, so of course I saw it as a way to gather a few friends! You don’t have to twist my arm to invite a few friends over for food and drink! I love a good appetizer and my friend Mishele introduced me to the BEST appetizer EVER a few years ago, so of course I had to make it for this little shindig. More on that later. I was sent 3 boxes of wine, even though one box is all you need!  Merlot, Sauvignon Blanc and a small dessert wine, Moscato. That’s a LOT of wine! Good thing it keeps for over a month after opening.

Their 3 Liter boxes are equivalent to 4 bottles. I really like the idea of not having bottles……..bottles tip over, they break, sometimes hard to open and I learned that this is 1/2 the carbon footprint of glass bottles. Who knew? I’m thinking wine in a box is the perfect wine for camping, outdoor concerts, BBQs. Who wants to worry about breaking a glass bottle?I gathered my wine glasses, sparkling water and the Black Box Wine and made my beverage “center”. Before I even thought about taking up close photos of the food, it was gone……..or maybe I was.  Actually I only drank one glass, I was just too busy enjoying myself eating the yummy food, visiting with friends and enjoying a glass of wine to think about taking more photos.  This is the only one I got of the food table…….yes it’s blurry…… I wasn’t tipsy. I was laughing at something. wine party blackbox wineThis isn’t a photo of the infamous bruschetta I make that I learned from Mishele, but it looks pretty close just to give you an idea.   Looks so fancy, but really………it’s comfort food.

  • You’ll need one baguette, either pre-sliced or you can slice your own.  I don’t toast mine before like you would for a tomato bruschetta.
  • Place as many as you can on a cookie sheet and place a small amount of Brie cheese on top.
  • Set under the broiler until the bread is starting to toast and the cheese is starting to bubble.
  • Pull it out of the oven and place a spoonful of corn salsa on top of the brie.   I buy mine at Trader Joe’s and it’s delicious!

These babies will be gone before you know it. Even my 14 yr old LOVES these!
