Peppermint Mocha Fudge Truffles Recipe

The holidays hit and I turn into a coffee creamer junkie! All those seasonal flavors! They’re not just for coffee you know. Last year, I made French Toast with their Cinnabon Flavored Creamer and this year, I wanted to Share My Delight and use their Peppermint Mocha Creamer. I thought I’d try making fudge, but the consistency was off and ended up being perfect for truffles! I love little surprises. You gotta roll with the punches sometimes.

I ended up rolling the fudge into small balls and dipping them in white chocolate candy melts. They are yummy!

International Delight Peppermint Mocha Fudge Truffles

  • 3 cups Sugar
  • 1/4 cup boiling water
  • 1 cup International Delight Peppermint Mocha Creamer
  • 1/4 teaspoon salt
  • 1 cup crushed peppermint candy
  • 1 bag candy disc melts

In a heavy saucepan, add boiling water and 1 cup sugar, stirring constantly. Carefully stir in remaining sugar, ID Peppermint Mocha Creamer and salt. Stirring constantly, bring mixture to a boil. Once boiling, no need to continue stirring. Heat to 242-248 degrees F – or you can drop a small amount of syrup into cold water. If it forms a firm but pliable ball, it’s ready. Remove from heat and cool to room temperature.

Beat mixture until it loses it’s shiny gloss. Immediately add crushed peppermint candy and roll into balls. Dip in melted white chocolate candy melts. Place on waxed paper to harden. Sprinkle crushed peppermint candy on the top before it hardens.

Of course this recipe can be adapted for any flavor. Just use your imagination.
