So many new appetizer recipes on TCL lately! These Brie and Corn Salsa Bites are the ultimate easy party food! If you’re having a gathering and need something that’s quick, delicious and only uses a few ingredients, then these little finger food cracker bites are it!
You could serve these up with the Chili Cheese Fries I made yesterday!
Brie and Corn Salsa Bites
I’m made this easy appetizer so many ways! The first time I had these, was when a girlfriend had made them. She used sliced baguette pieces instead of crackers which is so so good! That’s how I make it most the time.
But after making my Cheesy Olive Cracker Snacks, it reminded me that I also make these Brie and Corn Salsa Bites with crackers when I don’t sliced baguettes around.
You can use any type of cracker that you have, even saltines would probably taste good! If you saw my Instagram story, then you saw that I used what I call fancy crackers. Since the Corn & Chili Tomato-less Salsa is from Trader Joe’s, I also picked up the Fig and Olive Crackers.
This stuff is like gold! It’s so good on burritos, tacos, or just to dip chips into. If you don’t have a TJ’s nearby, you can buy it online. Or maybe look for a corn relish at your local grocery.
If you’ve never tasted it, it’s a base of sweet corn, combined with finely diced red bell peppers, onions, jalapeño peppers, and sugar.
How to Make Easy Appetizers
If you’ve got some sort of cracker, some cheese and something to top it with, you’re on your way.
- Brie Cheese Wedge
- Crackers - Any snack crackers will do.
- Sweet Corn Relish
- On a parchment-lined baking sheet, lay out your crackers.
- Slice small pieces of brie cheese and place on top of each cracker. I trim the rind off of the cheese.
- Broil for about 4 min until melted.
- Remove from the oven and spoon a small portion of corn relish on top of each cracker.
- Serve immediately.
Use sliced baguettes instead.
These easy appetizers are always the fastest to go.
