Creamy Limon Freeze Recipe
When our older 2 children were little we had the opportunity to live in Mexico for 15 mos. on a job with my husband’s company. During that time I had a wonderful friend that taught me how to make this simple, yet yummy and refreshing dessert. Since lime and lemon are a flavor of weakness for me, I have always enjoyed this delectable dessert. The simplicity of it makes it a go-to recipe any time I know we need a delicious dessert for company. Here’s how it’s made:

- Shortbread cookies or vanilla wafers
- sweetened condensed milk
- vanilla
- limes
- Layer cookies in 2″ deep dish till bottom is completely covered.
- Squeeze lime juice into measuring cup.
- Add juice, sweetened condensed milk, and vanilla in mixing bowl.
- Mix until well blended.
- Spread over cookie layer, cover, and freeze until firm (about 4 hours or overnight).

- 1 pkg. Shortbread cookies or vanilla wafers
- 2 cans sweetened condensed milk
- 2 tsp. vanilla
- ⅓-1/2 C. lime (or to taste)
- lime slice for garnish
Instructions
- Layer cookies in 2″ deep dish till bottom is covered.
- Squeeze lime juice into measuring cup.
- Add juice, sweetened condensed milk, and vanilla in mixing bowl.
- Mix until well blended
- Spread over cookie layer, cover, and freeze until firm (about 4 hours or overnight).
- Serve and enjoy!
