You know how it’s a constant chore to come up with dinner ideas day after day, week after week, month after month? For some reason, our families want dinner and they want it daily. And let’s be honest, some evenings, they’re lucky to get a bowl of cereal. Am I right?
Easy Lemon and Herb Baked Cod
Life is busy and it only gets crazier with school starting, so stocking our pantry with items that make preparing a last minute meal is our key to keeping our Mom of the Year crown!
With my son starting his junior year, he’s involved in soccer, school events and keeping his busy social game on track. My husband may arrive home anywhere from 5:30pm to 7pm. Trying to plan a dinner time on a regular basis is impossible, but we seem to figure it out like most families.
I was thrilled to try a new product by General Mills. I picked up The Good Table® – Lemon & Herb Sauce and Crust Mix for Fish at Walmart. They have 4 varieties, with 3 of them being for chicken. We love chicken and have it often, and I love fish, but always feel a little intimidated cooking it myself. I thought this looked easy and fool proof. In the basket it went.
When we have fish, it’s usually a freshly caught salmon direct from the Native American’s along the Columbia River near our home. It’s one of the best perks to living where we do. We can drive 30 minutes down the river and watch our dinner being caught. We come home and my husband usually just throws it on the BBQ. So baking fish just isn’t something I’ve done a lot of. Since I love fish, this Lemon & Herb mix seemed like the perfect solution. I didn’t have any fresh salmon, so I used my next favorite fish, Cod. Who doesn’t love cod?
I was thrilled to learn it was so easy! We ended up with delicious tasting fish that you’d think came from a restaurant! And guess how long it took me? 15 minutes from start to finish! 15!
The Good Table® Sauce and Mix comes with everything you’re going to need for perfectly delicious baked fish. It comes with a packet of sauce and specially seasoned bread crumbs. It’s as simple as coating your fish fillet with the sauce, dredging it through and coating with the seasoned bread crumbs, then baking 10-12 minutes. Done!
Now doesn’t that sound like the busy mom’s dream come true?
I added a simple veggie that I quickly saute’d in olive oil and garlic.
My family was impressed and was happy to have something new.
Now I can’t wait to try their other varieties for chicken! Bring on the simple and delicious dinners!
