Homemade Leftover Turkey Sandwich
When the turkey is roasted, the guests are gone, and the next lazy day is upon us, there are leftovers. Maybe you’re like me, and you get a turkey that’s just a littttttle too big for the family assembling around the table? This makes for good eating, particularly for the iconic leftover turkey sandwich. (recipe below)
And if we’re lucky, there’s also leftover cranberry sauce. The perfect end to a gluttonous holiday.
When I received my package of Pacific Foods full of organic goodness, I had to share it with my foodie friend who LOVES organic and loves to cook!
I knew if I showed her all of the yummy foods, she may just cook me something. I knew she couldn’t resist the following:
- Cranberry Sauce
- Pumpkin Puree
- Chicken Stock
These are the staples of the holiday! If you’ve got these items after Thanksgiving, then you can whip up the best leftovers or enhance what you’ve got.

How to Make a Turkey Sandwich with Thanksgiving Leftovers
Leftover Turkey Sandwich with Cranberry Sauce
Easy to make turkey sandwich with all the leftovers.
Ingredients
- Two slices of great sourdough bread
- Mayo
- Cranberry sauce
- Salt and pepper
- Leftover turkey meat
- Crisp romaine lettuce
- Cherry tomatoes, sliced or quartered (that no one ate on the obligatory veggie plate)
- Optional: cooked bacon, avocado
Instructions
- Spread mayo on one slice of bread, and cranberry sauce on the other. Be generous. Season with salt and pepper to taste.
- Lay out turkey meat on one side.
- Top with lettuce, and tomatoes, and top with the other slice of bread.
- Eat!

pureed pumpkin in the carton is the way to go for pumpkin bars; chicken broth in the carton is great for our favorite chicken spaghetti recipe and because the carton has a closure on it, the extra can stay in the carton, refrigerated, to be used in the next few days with many other chicken dishes..

If I have extra stock left from the carton I put it in an ice tray and put it in the freezer. Easy for sautéing chicken. I also keep fresh herbs frozen in the same ice tray with a drop or two of water. When I need either items they’re right at my fingertips. If you have a few tablespoons left over don’t throw it away. Save it and save Money!

My fave carton recipe is for a ymmy soup – 2 cartons organic chicken broth, 1 carton organic chopped spinach (thawed), handful of organic carrots sliced, half a yellow onion chopped, carton of cheese tortellini. Simply boil all the ingredients until the carrots are soft and you a delicious healthy soup. We sprinkle it with shaved Parmesan cheese at the table.

One thing I have found really handy is milk in shelf-stable cartons like those shown above. It doesn’t have the weird taste of powdered, but it still lasts a long time without refrigeration. If you buy it in 8-ounce cartons, there is very little waste of milk.

Small? Smart recipe? Carton? Using carton packaged foods SAVE TIME!
How about…
a 2c. carton of heavy cream + 1 pound of shredded potatoes + salt + pepper = One elegant, melt in your mouth family pleasing dish, also perfect for entertaining!
Peel and shred potatoes. Rinse potatoes several times in clean water each time, till water runs clear. Pat dry.
(Or…..find a “carton” of dehydrated potatoes to save time!!)
Layer 1/3 of potato shreds into pan. Sprinkle with salt & pepper. Layer another 1/3 on top. Sprinkle with salt & pepper. Repeat with remaining potato shreds.
Pour heavy cream on top.
Bake, uncovered, in a 350 degree oven, for 50 minutes, till golden brown and bubbly.

We love Pacific too! I always use their organic free range low sodium chicken broth or their organic vegetable broth in soups and stews. I love that we can recycle the carton after. I’ll have to search for their cranberry sauce and pumpkin puree. I would totally make a grain free pumpkin pie with it.

I’m in the Pacific Northwest too, so all about the organics and the 3Rs! I love using carton pumpkin purée to make my family’s favorite holiday traditional treat: pumpkin pie bites. I roll out my pie crust (a recipe found in the cook book my dad got my mom in 1971 for their first Christmas as a married couple!), and then mix pumpkin purée with some brown sugar, cinnamon, nutmeg, ginger, all spice, and ground cloves (the classics). I use a cookie cutter to cut out fun shapes in the pie dough, and then spoon in a bit of the pumpkin mix to the center of the dough cut-outs. I press them together with a fork, paint it with egg whites, and then bake over parchment paper. Handheld pumpkin pie!
I also use carton chicken stock in my other holiday favorite, green bean casserole! I boil the green beans in the stock to give them a really great flavor.

the best tomato sauce starts with tomatoes from a carton because they are simply tomatoes with none of the added stuff that you don’t want nor need. Start with a saute of onions & garlic in olive oil. Add chopped fresh herbs and pour in your carton of tomatoes and season to taste with sea salt and freshly ground pepper. Grate some nice Italian cheese into it (romano works nicely.) Serve over your favorite pasta or use on homemade pizza dough.

I save chicken broth and freeze it, rather than throwing it out when I boil chicken for any reason. Then when any dish is needing a bit of flavor, I add my homemade chicken broth.

I use carton chicken stock ALL the time. My favorite recipe is frozen chicken breasts, 1 cup chicken stock (I always use the boxes from Costco), and a packet of Italian dressing mix. All day in the crockpot… and BAM! Dinner. When you get home (8 hours on low), take out the chicken, dump in a packet of Stove Top, stick the lid back on and you have a side dish too!

I’m from WA state and I have to say I LOVE recycling. I don’t live there anymore, but I love having grown up caring about the environment and how to make it better. I love how her design doesn’t need preservatives! Anyways, I don’t know if you want the whole recipe in the comments, but just tonight I made some delicious bean/quinoa tacos. It called for chicken broth, which you can use from a carton or can. It’s delicious and so very healthy. I top it with some queso fresco (mexican cheese). It makes a TON, so I would half it. 🙂
1 1/2 cups cooked quinoa

1 Tbsp olive oil
1 medium yellow onion, diced
3 cloves garlic, finely minced
1 cup vegetable broth or chicken broth
1 (14.5) oz can diced tomatoes with green chilis, undrained
1 1/2 tsp chili powder
1 tsp ground cumin
1/2 tsp paprika
1/4 – 1/2 tsp cayenne pepper
1/4 tsp ground coriander
Salt and freshly ground black pepper, to taste
1 1/2 cups frozen corn
2 (15 oz) cans black beans, drained and rinsed
juice of 1 lime
1/2 cup cilantro, chopped
Heat olive oil in a large non-stick saucepan over medium high heat. Once hot, add onion and saute until golden and tender, about 3 minutes. Add in garlic and saute 30 seconds longer. Stir in broth, diced tomatoes, cooked quinoa, chili powder, cumin, paprika, cayenne, coriander and season with salt and pepper to taste. Bring mixture to a boil, then reduce heat, cover saucepan with lid and simmer about 20 minutes, until mixture has thickened.
Stir in corn and black beans and simmer, uncovered 5 – 10 minutes, stirring occasionally. Mix in lime juice and cilantro. Serve warm over tortillas with desired toppings.

Did you over cook any chicken breast? Just simply take chicken stock and heat up, pour a little over the chicken breat. This can also be done for turkey as well. I lovet o recycle, i always try to buy bigger and package smaller so their is less waste
