Homemade Leftover Turkey Sandwich
When the turkey is roasted, the guests are gone, and the next lazy day is upon us, there are leftovers. Maybe you’re like me, and you get a turkey that’s just a littttttle too big for the family assembling around the table? This makes for good eating, particularly for the iconic leftover turkey sandwich. (recipe below)
And if we’re lucky, there’s also leftover cranberry sauce. The perfect end to a gluttonous holiday.
When I received my package of Pacific Foods full of organic goodness, I had to share it with my foodie friend who LOVES organic and loves to cook!
I knew if I showed her all of the yummy foods, she may just cook me something. I knew she couldn’t resist the following:
- Cranberry Sauce
- Pumpkin Puree
- Chicken Stock
These are the staples of the holiday! If you’ve got these items after Thanksgiving, then you can whip up the best leftovers or enhance what you’ve got.

How to Make a Turkey Sandwich with Thanksgiving Leftovers
Leftover Turkey Sandwich with Cranberry Sauce
Easy to make turkey sandwich with all the leftovers.
Ingredients
- Two slices of great sourdough bread
- Mayo
- Cranberry sauce
- Salt and pepper
- Leftover turkey meat
- Crisp romaine lettuce
- Cherry tomatoes, sliced or quartered (that no one ate on the obligatory veggie plate)
- Optional: cooked bacon, avocado
Instructions
- Spread mayo on one slice of bread, and cranberry sauce on the other. Be generous. Season with salt and pepper to taste.
- Lay out turkey meat on one side.
- Top with lettuce, and tomatoes, and top with the other slice of bread.
- Eat!

I always use the chicken stock in the carton! We keep it on hand as our go to ingredient for a lot of our recipes. Especially this time of year for our loaded baked potato soup. I also freeze any leftover stock into ice cube trays so I dont waste it, and IcIcan pop out however many I need for the next recipe.

Many years ago I went to college in Europe – I learned the ease of ‘carton’ shopping for many reasons – less preservatives, not as heavy as glass, not as toxic as plastic or metal, longer shelf life AND – when you are done, the empty box can be folded so small reducing bulky trash! Every broth, soup, soy milk and rice milk I buy is in a carton. In my kitchen I use milks for cereals and oatmeal, broth is used for ALL soups and chili! I pour broth over a whole chicken that I roast in the oven with vegetables.
I like to cook my rice with broth – I substitute the water with any flavor broth, adding some chopped vegetables when i have some and steam it for recommended time – the added flavor is great!

I use the Pacific brand of butternut squash soup and just add a mixture of fresh herbs from my garden. Might be cilantro and green onions one day. Basil and thyme another day. Yum.

We love Pacific’s stock! If the pan-dripping gravy runs out before the other leftovers do, I make “extra” gravy from beef stock mixed with chicken stock – the beef gives it extra depth of flavor which holds up well to the stuffing and turkey.

I am a huge fan of chicken stock from a carton – super easy tomato soup = onions & celery in olive oil, once cooked add crushed tomatoes, some chicken stock and spices. Toss in a bit of shredded cheese in the end and viola!

We add warmed organic chicken broth in a carton to soften up puppy kibble when the babies are beginning to eat solid food. Now, about that sandwich: dontcha know that the ONLY Thanksgiving night sandwich is thus-
Old fashioned white bread (potato bread will do)- with some “squish” factor-not gluten free- only once a year!
Turkey breast ONLY- no dark meat
Miracle whip (yes, the only time of year it’s acceptable to eat this stuff!)
Whole berry cranberry sauce
Kosher salt sprinkled directly on the turkey (do not omit the salt!)
There you have it. Forget the formal meal and move straight to the good stuff!

Because we try to avoid food in cans, we turn to these smart cartons often. We use stock to cook rice or quinoa instead of water, my Oregon chai tea comes in a box, and we prefer our soups and purees that way. I would love beans in cartons!

One of my friends (he’s Belgian) makes a killer pumpkin pie. BUT, he always makes mini pies and hides them somewhere in the house. When guests leave after the dinner party, raving about the amazing pie, he whips out small baskets with mini pies, all packed and prepped for folks to take home. It’s such a thoughtful touch and ensures all the ingredients get used. 🙂

I’m always loving the shelf-stable cartons of heavy cream and milk (especially wonderful around the holidays to keep on hand that don’t expire for a LONG time!). My newest fave though, is the larger carton of tomato sauce. I can use however much I want and keep it ready and waiting in the fridge with no waste. My biggest “smart” item for the holidays (or anytime!) is using my pressure cooker. It saves time, energy, AND flavor. Yummy! Super quick soups, stews, and all your fall wonderfoods. Plus, cooking PUMPKIN in the pressure cooker keeps that smell from permeating your house!

I’ve been making gluten free condensed soups to keep in the freezer to use for cooking. I also keep several cartons of dairy free milk on hand in different flavors. I discovered that they actually freeze well when you don’t need the whole package. Doesn’t last forever, but then I don’t need small packages and even less waste.

I use eggnog as coffee creamer which makes the coffee taste awesome! The eggnog is from a local dairy and is in a glass bottle, which I return to the store after use so that the dairy farm can reuse it. Also I use one to two teaspoons of sugar in the raw which is in a cardboard box. 🙂

I use the pacific foods cream of chicken soup A LOT! Because it’s gluten free! It’s about the only one on the market 🙂 But it is perfect. I can make my chicken and dumplings thanks to this! I also like a lot of their soups.
