Today we have a recipe for a Spinach Artichoke Omelet from Lauren at Taste Better from Scratch. Yum! We love eggs around there, but I’ve never tried adding artichoke hearts! Spinach Artichoke Omelet
Hi everyone, this is Lauren, visiting from the food blog, Tastes Better From Scratch, and I’m soo excited to share this yummy recipe with you!
Saturday mornings are for making breakfast! I get so excited to sleep in on the weekend and prepare a yummy breakfast for my family that I actually usually end up waking earlier than normal. I’m weird that way. The thought of making something delicious for breakfast–like Crunchy French Toast, or Strawberry Lemon Ricotta Pancakes— is all the motivation I need to get going in the morning!
I usually want something healthy, but also kinda ‘hearty’ that will fill me up. Omelets are perfect for that! You can make them using the whole egg, or just the egg whites (if you’re cutting calories), and you can throw in any veggies from your fridge.
I love trying fun and different omelet combinations, like this Spinach Artichoke Omelet, which is fantastic! I scarfed every last bite and will definitely be making it again soon! It hardly takes longer than making a batch of scrambled eggs….so why not make something SO much better with my time? Omelets are the way to go, I’m tellin’ ya!

Spinach Artichoke Omelet Ingredients and Supplies
- eggs (or egg whites)
- milk
- dash of garlic powder
- dash of salt and fresh cracked black pepper
- feta cheese
- fresh spinach leaves
- marinated artichoke hearts
- fresh shredded Parmesan cheese
I use an 8 inch skillet, and a spatula
Sprinkle feta cheese, spinach, artichoke hearts and parmesan cheese on top of the omelet and then place a lid on the pan and turn heat to low. Cook on low until top is just barely set, just 1-2 minutes. Season with additional salt and pepper, if desired. Fold omelet over, in half, and slide onto serving plate. Enjoy!

How to make a Spinach Artichoke Omelet
Spinach Artichoke Omelet Recipe
Recipe adapted from Our Best Bites
Ingredients
- 3 whole eggs (or egg whites)
- 1 Tbsp milk
- dash of garlic powder
- dash of salt and fresh cracked black pepper
- 1 Tbsp feta cheese
- 1/2 cup chopped fresh spinach leaves
- 3-4 marinated artichoke hearts, chopped
- 1 Tbsp fresh shredded Parmesan cheese
Instructions
- Heat an 8-inch nonstick frying pan to medium heat. Whisk together eggs, milk, garlic powder, and a dash of salt and pepper.
- Spray pan with cooking spray or brush with a little olive oil. Add egg mixture to the hot pan and swirl to coat bottom of pan.
- Use a rubber spatula to slowly scrape from the outside edge of the omelet inward, letting the runny eggs flow to the outside of the pan. Doing this a few times, inching your way around the entire outside of the omelet.
- Sprinkle feta cheese, spinach, artichoke hearts and parmesan cheese on top of the omelet and then place a lid on the pan and turn heat to low. Cook on low until top is just barely set, just 1-2 minutes. Season with additional salt and pepper, if desired. Fold omelet over, in half, and slide onto a serving plate. Enjoy!
